Feta & Cranberry Chickpea Salad with Lemon Vinaigrette

Salad

1 can (15 oz / ~2 cups) chickpeas, drained and rinsed

½ cup crumbled feta cheese

⅓ cup dried cranberries

¼ cup finely chopped red onion

¼ cup chopped fresh parsley or dill

½ cup diced cucumber (optional)

Lemon Vinaigrette

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

1 tsp honey (optional)

1 tsp Dijon mustard (optional)

1 small clove garlic, minced (optional)

Salt & black pepper, to taste

Make vinaigrette: Whisk olive oil, lemon juice, optional honey, Dijon, garlic, salt, and pepper until emulsified.

Assemble salad: In a large bowl, combine chickpeas, feta, cranberries, red onion, herbs, and optional cucumber.

Dress: Pour vinaigrette over salad and toss gently.

Rest: Let sit 10–15 minutes before serving chilled or at room temperature.
