Kinder Nutella Cookie Bars

400g nutella
225g salted butter, room temp
110g caster sugar
140g brown sugar
2 eggs
1 tsp vanilla
200g cake flour
210g plain flour
1/2 tsp bicarbonate soda
1/2 tsp salt
200g white choc chips
200g milk choc chips
18 large kinder bars (21g each)

Line an 8 x 8 square baking tin with parchment pape. Heat your Nutella for 1 min in the microwave so it’s runny. Pour 400g into the lined tray. Smooth it out and freeze. Do this an hour or day before making the cookies.
In a large bowl beat together the butter and sugar. Then beat in the eggs and vanilla until fully combined.
Add your flours, bicarbonate soda and salt. Fold until just combined. Add the choc chips & again fold until just combined.
From your 8 x 8 baking tin, remove the Nutella with the paper and keep in the freezer as it melts quick. Line the tin again.
Use just over 1/3 of the cookie dough (~500g) and flatten it into a cookie layer as the base. Layer your kinder chocolate bars ontop. Add another thinner cookie layer (~350g). Push it down into the bars and really flatten it. Add your frozen Nutella layer, then the remaining cooking dough ontop (~500g) into a smooth layer.
Bake in an 180°C fan-forced oven for 23-25 minutes on the middle rack. It will continue cooking when you take it out. If you like a more crunchy cookie try cooking for 27m.
Put it in the fridge overnight and let it solidify before cutting it into sizes.
TIP: before eating, heat them up for 30s ❤️
