OLD-FASHIONED MEATLOAF

1lb.ground chuck

1 lb.ground pork

1 medium white or yellow onion

4 Cup fresh breadcrumbs (from 2 slices of

stale bread, ground)

2/3 cup milk

1 large egg

4 Tbsp. ketchup

3 Tbsp. Worcestershire sauce

1/2 tsp. kosher or fine sea salt

1 tsp. garlic powder

3/4 tsp. pepper

SAUCE

2 cup ketchup

3 Tbsp. apple cider vinegar

3 Tbsp. brown sugar

INSTRUCTIONSs

1. Preheat oven to 350 degrees F. Line the bottom of a cast-iron or enameled cast-iron Dutch oven with a piece of parchment paper.

2. Combine the meats in a large mixing bowl. Grate the onion over the meat with a box grater. Add the rest of the meatloaf ingredients and mix lightly with a fork, be careful not to mash the ingredients together. Shape the mixture into a loaf shape and place on the parchment paper.

3. Combine the sauce ingredients and pour over the meatloaf. Cover the Dutch oven and bake for 1 hour to 1 hour 15 min

4. Pour the sauce out of the pan into a large glass measuring cup. Keep the Dutch Oven covered and let the meatloaf sit while reducing the sauce. Skim off as much fat from the sauce as possible, pour into a saucepan and bring to a boil. Let boil for 6 to 7 minutes or until reduced and thick.

5. Remove the meatloaf with a large spatula to a serving plate and top with the sauce.
