Quesadilla sauce

1/2 cup sour cream

2 Tbsp mayonnaise

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp paprika

1/4 tsp salt

1/4 tsp cayenne pepper

*optional diced jalapeno*

1. Mix all ingredients together.

2. Best if refrigerated at least 10 mins before eating but you can eat it right away.

To make quesadillas...

1. Heat a frying pan up to medium heat or a griddle up to 350 (i prefer a griddle because i can make 2 at once).

2. Put a little pat of butter in and melt it so it covers your surface.

3. Put your tortilla down flat and cover one side with a lightish layer of cheese (you should not see much tortilla through your shredded cheese). Make sure the cheese does not go all the way to the edge of the tortilla. Keep it about a half inch in from here or it will melt out as it cooks.

4. Add all of your desired toppings on top of the cheese. Kind of smoosh down with your hand to even it out. Sprinkle a layer of garlic powder on top of this. Trust me, dont miss this step. Add another layer of cheese on top of that all.

5. Fold over your tortilla to close it up and press down lightly all along the fold with a spatula to crease it. Continue to cook it for a few minutes but check it along the way and make sure you dont burn it.

6. Flip your quesadilla and cook the other side! Once done, let it cool for a sec before you use a pizza cutter and cut into 3 or 4 sections.

If you dont have a griddle and have to use a pan, but want to eat at the same time, just cook one quesadilla and cook the second one. Once #2 is done, put #1 back in the oan and heat up both side really quick just to get it hot again. Thats what i do!

-my favorite is a cheese quesadilla with no meat. I do safeway brand seasoned black beans (drained from a can), green onion, cilantro, and diced jalapeno. Also good is small cubed avocado or red onion.

-brandon likes either ground beef cooked in taco seasoning (jusy the amount that a packet calls for or the jard of seasoning calls for) or we have shred up a chicken breast and mixed in taco seasoning. Both were also really good

-if youre looking for a lower calorie sauce alternative, or just a second dipping sauce, make the roasted jalapeno crema in here!! Its amazing. I half the recipe for that for the 2 of us. Makes a good amount.
