Spicy Texas-Style No-Bean Chili (Crockpot)

2 lbs ground beef (80/20)

1 medium onion, diced

1 can (14.5 oz) crushed tomatoes

4 cloves garlic, minced

2 tbsp chili powder

1–2 tsp cayenne pepper (adjust to taste)

1 tsp smoked paprika

1 tsp cumin

1 tsp oregano

½ tsp crushed red pepper flakes

1 tsp salt (adjust later)

½ tsp black pepper

3 tbsp tomato paste

1/2 cup beef broth

2 fresh jalapeño peppers, diced (keep seeds for heat)

1–2 Serrano peppers, diced (adjust to taste)

1–2 tsp masa harina (optional, for extra thickness)

1. Brown the ground beef in a skillet until slightly crispy. Transfer to the crockpot. Scrape browned bits with a splash of beef broth and pour into crockpot.

2. Stir in onion, garlic, chili powder, cayenne, smoked paprika, cumin, oregano, red pepper flakes, salt, and black pepper. Add tomato paste and diced jalapeño + Serrano peppers.

3. Pour in 1 cup beef broth (just enough to loosen chili for the slow cooker).

4. Cover and cook on LOW for 5-6 hours (or HIGH for 3-4 hours). Stir occasionally if possible.

5. After cooking, uncover and simmer another 30-45 minutes on LOW. Mash some of the meat as it cooks for extra thickness.

6. Optional: Stir in 1-2 tsp masa harina for thicker chili.

7. Taste and adjust salt or spice as needed. For extra heat, leave more seeds in the peppers or add extra Serrano.
