400g 00 Flour (portioned for 3 people)

4 whole eggs + 1 egg yolks)

18.5g (1tbsp) fined sea salt

Yöntemler

1. Make volcano with flower and add eggs in middle

2. Break the egg yolks and slowly combine flower to eggs

3. Add plenty of all purpose flower to counter

4. Once combined nead the dough for 8-10

5. Once done add plenty of flower to plastic wrap and add dough then add more flower to top and wrap

6. Let dough rest for 30 minutes

7. Cut dough into 4 pieces

8. Place other pieces back in plastic wrap

9. Add more flower to counter

10. Run the dough through biggest size and fold dough to create a square shape

11. Run dough through each setting twice and stopping at size 6 or 7

12. Stopping around size 3 or 4 to cut dough in half

13. Use back of hand to catch the dough as it goes through the roller

14. STOP at thin level 3

15. Let pasta sheets dry for a few minutes

16. Add flour to cutting attachment

17. Run dough through cutting machine. Add enough flower to keep from sticking

18. Add 1.5 grams of kosher salt per cup of water for cooking pasta

19. Make sure sauce is already ready before cooking pasta

20. Cook pasta for 1-2 minutes

21. Use tongs to pull pasta out (DO NOT DRAIN PASTA)
