Creamy Chicken Piccata

- 1 lb chicken breast cut thinly 
- 1 cup flour 
- 300 ml heavy cream 
- Large glug white wine 
- Chicken stock cube 
- 1 whole lemon 
- 1 whole shallot diced 
- 1/4 jar sun dried tomatoes 
- Spinach 
- 2-3 tbsp olive oil 
- 2 tsp garlic powder 
- 2 tsp onion powder 
- 2 tsp dried oregano 
- 2 tsp black pepper 
- 1-2 tsp salt 
- Parsley to garnish 
- 1/2 stick butter divided 
- Rice to serve 
Yöntemler
- Butterfly your chicken thighs and coat in salt, pepper, garlic powder, onion powder and fried oregano. 
- Fry chicken in a skillet or frying pan and set aside. 
- Get your rice on to cook. 
- Fry your onions and any veggies (I used spinach and courgette) and add your sundried tomatoes too. Fry for a few mins or until happy. 
- Deglaze the pan with your large glug of white wine. Use as much as you want and cook down. 
- Add your cream into the pan along with the stock cube and stir until dissolved 
- Add lots of handfuls of spinach as desired, and some sweetcorn. 
- Add a handful of freshly chopped parsley if available. 
- Bring to the boil and loosen the sauce if needed with some water or any spare cream. Adjust taste with salt and pepper. 
- Add the chicken back into the sauce to warm up. 
- Serve with rice.
