Rice with lentils

2 cups basmati rice

2 cups green lentils

½ cup oil (split: ¼ cup for the rice, ¼ cup for the onions)

3 large onions

1 tablespoon salt

5 cups water

Wash the Rice and Lentils

In a fine mesh strainer, rinse the rice and lentils thoroughly under running water. Drain and set aside.

Cook the Rice and Lentils

In a medium-sized pot (preferably nonstick), heat ¼ cup of oil over medium heat.

Add the rinsed rice and lentils, followed by the salt and water. Mix well.

Leave uncovered and bring to a boil. Once boiling, gently mix again, cover with a lid, and reduce the heat to low.

Simmer for 20 minutes until fully cooked.

Prepare the Fried Onions

While the rice is cooking, peel and slice the onions into half-moon shapes (or cubes, if preferred).

In a large pan over medium heat, warm ¼ cup of oil.

Add the onions and fry until crispy and golden brown, about 10 minutes.

Assemble the Mejadra

Once the rice and lentils are done, remove the lid and fluff gently with a fork.

Add the fried onions along with their oil on top. You can either leave them as a topping or mix them in—both ways are delicious!

Serving Suggestions

Enjoy as is or pair with yogurt, fresh parsley, and a side salad.

Complements meat, fish, poultry, or stands alone as a satisfying meal.

Make ahead and refrigerate or freeze for later.
