Chicken Teriyaki Fried Rice

Homemade teriyaki
3 finely minced garlic cloves
4 tablespoons soy sauce
2 tablespoons zero cal brown sugar
4 tablespoons mirin
Optional: Ginger (equal quantity as garlic)
Simmer for 3-4 mins. Add corn starch slurry to thicken (1 tablespoon cornstarch & 2 tablespoons cold water)
25oz chicken thighs
2 tablespoons teriyaki sauce
1 tsp fish sauce
1 tablespoon avocado oil

Marinate at least 1 hour, or overnight for best results
300g mixed frozen veggies of choice
200g egg whites
2 eggs
300g rice (dry weight, ~700g cooked)
4 tsp sesame oil
2 tablespoons soy sauce
Separate in to 5 equal servings and enjoy!
