RAISIN SCONES

4 c. flour
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 1/2 sticks butter, softened
1/2 c. golden raisins
1/2 c. raisins
1 c. whipping cream
3 large eggs (divided)
1 Tbsp. vanilla
1 Tbsp. grated lemon peel
2 tsp. water
วิธีทำ
Sift flour, sugar, baking powder, and salt. Cut in butter. Stir in raisins. Whisk cream, 2 eggs, vanilla, and lemon peel. Add to flour mixture - stir just until combined.
Make a ball, knead lightly. Roll into circle 3/4" thick. Cut scones (2" cookie cutter?). Place on greased baking sheet. Brush scones with egg and water mixture.
Bake at 400° for 20 min until golden.
Serve warm or room temperature with butter and jam.
