Sweet Pickles

16 pounds pickles
6 pounds sugar
Salt
1 gallon vinegar
2 ounces alum
2 ounces cinnamon sticks (3)
3 tablespoons pickling spices
2 ounces celery seeds
วิธีทำ
Soak pickles in brine for 3 days; drain
(For brine, use plain salt and dissolve in water Add salt til egg floats on top; salt shouldn't settle)
Soak pickles in clear water for 3 days; drain
Dissolve alum in water, enough to cover pickles
Simmer, do not boil, for 2 hours
Drain and slice pickles
Add vinegar, spices and 1/2 of sugar
Bring to boil; cool and let sit
Next day, pour off vinegar and reheat to boil
Add more sugar; pour back over pickles
Second day, pour off vinegar
Add rest of sugar; bring to boil
Pour back over pickles
Third day, pack pickles in hot, sterile jars
Pour boiling vinegar over them
Wipe top of jar then seal
If don't seal on their own, pack in boiling bath for 5 minutes
