Chocolate Roll

CAKE
6 eggs separated
3/4 cup sugar
1/3?? cup unsweetened cocoa
1/2 teaspoon vanilla extract
Powdered sugar
Dash salt
FILLING
1-1/2 cups chilled whipping cream
1/2 cup powdered sugar
1/4 cup unsweetened cocoa
2 teaspoons instant coffee
1 teaspoon vanilla extract
วิธีทำ
Get egg whites to room temp, about 1 hour
Grease bottom of jelly roll pan, line with wax paper, and grease lightly
Preheat oven to 375
Beat egg whites til soft peaks form
Add 1/4 cup sugar, 2T at a time, til stiff peaks form
Beat egg yolk at high speed with the same beaters
Add remaining 1/2 cup sugar, 2T at a time
Beat until mixture is very thick, about 4 minutes
At low speed, beat in cocoa, vanilla and salt til smooth
Gently fold cocoa mixture into egg whites
Spread evenly on pan
Bake 15 minutes, just til surface springs back
Sift powdered sugar on clean linen towel
Turn cake out on sugar; lift off pan
Peel paper off cake and roll, starting with short end, towel and all
Cool completely on rack, seam side down at least 1/2 hour
Combine filling ingredients in medium bowl
Beat with mixer til thick and refrigerate
Unroll cake, spread with filling to 1" from edge
Re-roll , with seam side down
Frost with whipped or sprinkle with powdered sugar
Refrigerate 1 hour before serving
