CINNAMON ROLLS

DOUGH:
2 pkgs. dry yeast
1 c. warm water
1 t. sugar
2 c. scalded milk
2/3 c. melted shortening
3/4 c. sugar
4 t. salt
2 beaten eggs
9-11 c. flour
FILLING:
2 c. brown sugar
4 t. cinnamon
2 sticks margarine
1/2 c. grape jelly
FROSTING:
Powdered sugar

วิธีทำ
Makes: 2 long rolls of dough, slice each into 18 rolls.
Scald milk, remove from heat, and add shortening, 3/4 c. sugar and salt. Let cool to room temperature; then add eggs.
When above mixture is warm: (Tip: heat bowl first w/ hot water). Place 1 c. very warm water and 1 tsp. sugar in heated bowl. Stir with hand till water/sugar reach good temperature for yeast. Add yeast; stir w/ hand for abt. 2 min. (Should get frothy).
Add 2 c. flour (use mixer) to make soft dough. Add 7 more cups, one cup at a time!! Mix, then let rest for 10 min. Knead on a lightly floured surface (if more flour is needed - up to a total of 11 cups - add just a little at a time). Place in a greased bowl and turn. Cover and refrigerate for 3+ hrs. [Dough can be frozen now.]
After filling is made, rolls can be refrigerated until ready to bake. Otherwise, raise for 1 1/2+ hrs in 2 greased 9x12 pans.
Bake 350° for 20 min.
Drizzle with pwdr sugar icing when cool.
