NUT ROLL

Dough:
2 pkgs. dry active yeast
1/2 c. lukewarm water
3/4 c. sugar
4 egg yolks
1/2 lb. butter (melted and cooled)
1 c. sour cream
5 1/2 c. flour
1 t. salt
1 t. vanilla
Water
1 egg yolk (for top)
Filling:
1 1/2 lb. chopped walnuts (3 cups)
3/4 c. milk
1 1/2 c. sugar
3 eggs
1/2 c. honey
1 t. vanilla
วิธีทำ
Dough:
In a bowl, combine water and yeast; add a pinch of sugar. Let sit to proof.
In a separate bowl, combine egg yolks, vanilla, sour cream, and butter. Add sugar and salt, and mix well. Add proofed yeast mix.
Add flour 1 c. at a time, pausing to allow each cup to mix well. Remove from mixer when dough is too thick and knead in the final cups by hand. Continue to knead dough until shiny.
Place in greased bowl and turn to grease all sides. Chill overnight (or 3 hrs).
Filling:
Chop walnuts in food processor to desired size (large sand texture is best.) Scald milk in large saucepan over medium heat until simmering. Add sugar, eggs, honey, vanilla, and walnuts. Cook over low heat until thick, about 10 min.
Take dough out of refrigerator. Roll out thin (no thicker than 1/4") to about 6" x 10" on very-lightly floured board. Spread filling starting from near side; leave 1/2"-3/4" of space on far side for seal. Filling should be abt 1/8"-1/4" thick; careful not to tear or press hard into the dough. Roll dough over along long side for 10" roll; pinch edge of dough very firmly into roll to seal.
Carefully put roll on greased and floured sheets; twist to locate pinched seal underneath the roll. Cover and let rise for 1 hr. or until double.
Bake at 350° for 30-45 min. In the last 10 min, brush w/ egg yolk and water mixture. Roll should be golden brown.
