Chocolate Crinkle Cookies

1 cup granulated sugar
¼ cup vegetable oil
2 eggs (room temperature)
1 tsp vanilla extract
1 ¼ cup all-purpose flour
½ cup dark cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup granulated sugar (for rolling the cookies)
1 cup powdered sugar (for rolling the cookies)
วิธีทำ
In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl with an electric hand mixer, mix together the granulated sugar, vegetable oil, eggs, and vanilla extract until combined and smooth.
Add the all-purpose flour, dark cocoa powder, baking powder, baking soda, and salt and mix on low speed until the cookie dough comes together. Scrape the sides and bottom of the bowl.
Portion the cookie dough using a small cookie scoop and place the dough balls onto a baking sheet pan lined with parchment paper. Chill the dough for about 1 hour.
Preheat the oven to 350℉ (177℃). Line baking sheet pans with silicone baking mats or parchment paper.
Roll the chilled cookie dough balls in granulated sugar first and then in powdered sugar. Place the cookies on the prepared baking pan allowing room for spreading.
Bake the cookies for about 10 minutes until the edges are set and appear slightly gooey in the center. Cool the cookies on the pan for 2 minutes and then transfer to a wire rack to cool completely.
