Hot Chocolate Souffle

3/4 cup unsweetened cocoa
3/4 cup sugar
1/2 cup flour
1/4 teaspoon salt
2 cups milk
6 eggs yolk, well beaten
2 tablespoons butter
1 teaspoon vanilla extract
8 egg whites at room temperature
1/4 teaspoon cream of tartar
1/4 cup sugar
Whipped cream
วิธีทำ
Lightly butter 2.5 quart souffle dish and sprinkle with sugar
Measure foil to fit around dish
Fold into thirds and lightly oil one side
Tape securely to outside of dish, oil side in, at least 2" above dish
Combine cocoa, 3/4 sugar, flour and salt in saucepan
Gradually blend in milk
Cook over medium heat, stirring constantly with wire whisk, until boils Remove from heat
Gradually stir in small amount of chocolate mixture into beaten egg yolks
Blend well; return egg mixture to chocolate mixture in pan
Add butter and vanilla, stirring until combined
Set aside; cool to lukewarm
Beat egg whites with cream of tartar until soft peaks form
Add 1/4 cup sugar, 2T at a time, beating til stiff peaks form.
VERY Gently fold 1/3 of chocolate mixture into beaten egg whites
Fold in remaining chocolate mixture, half at a time, just til combined
Gently pour mixture, without stirring, into prepared dish
Smooth top with spatula
Place dish in larger pan; Place in oven on bottom rack
Pour hot water into pan to depth on 1"--do not touch foil
Bake at 350 for 70 minutes; test halfway between edge and center
Remove foil and serve immediately with whipped cream
