Country Brunch Skillet

6 strips bacon
6 cups cubed frozen hash brown potatoes
3/4 cup chopped green bell peppers
1/2 cup chopped onions
1 teaspoon salt
1/4 teaspoon black pepper
6 eggs
1/2 cup shredded cheddar cheese
วิธีทำ
Cook bacon til crisp
Remove bacon, crumble, and set aside
Reserve 2T drippings
Add potatoes, pepper, onion, salt and pepper to drippings
Cook and stir for 2 minutes
Cover and cook, stirring, until potatoes are browned and tender (15 min)
Make 6 wells in the potatoes and add eggs
Cover and cook on low heat for 8-10 minutes, or til eggs are set
Sprinkle with cheese and bacon
