Cherry Strudel

1 1/4 cups sugar
1/2 cup packed brown sugar
1 1/2 tablespoons cornstarch
4 cups red cherries
1/3 cup water
2 teaspoons lemon peels
1/2 teaspoon almond or vanilla extract
1/4 teaspoon allspice
1/8 teaspoon cinnamon
8 sheets frozen phyllo pastry leaves thawed
3 tablespoons melted butter
วิธีทำ
Mix sugars and cornstarch in saucepan
Stir in cherries, water, zest, and vanilla
Cook over medium heat til bubbling and thickened
Reduce heat to low; add allspice and cinnamon
Cook, stirring occasionally, for 15 minutes
Remove from pan and cool completely
Preheat oven to 400; grease a baking sheet
Unfold phyllo dough
Stack 4 sheets on plastic wrap
Brush top sheet with 1T butter
Keep remaining sheets covered with plastic wrap and a damp cloth
Spread half filling along a short side
Using plastic wrap, roll up pastry jelly-roll style
Fold ends under
Place strudel, seam side down on baking sheet
Brush with butter
Repeat with remaining to make second strudel
Bake until golden, 15-20 minutes
Transfer to wire rack to cool for 15 minutes
Sprinkle with powdered sugar
