🍚 Homemade Small Tapioca Pearls (for Pudding

🧂 Ingredients:

1/2 cup tapioca starch (cassava starch)

1/4 cup boiling water

Optional: pinch of salt

1. Boil the water:

Bring water to a boil—it must be boiling or the starch won't form dough.

2. Make the dough:

Place the tapioca starch in a bowl.

Slowly pour in the boiling water, mixing with a spoon at first (it will be hot), then knead by hand until it becomes a smooth, pliable dough.

Add more starch or a drop of water if needed to get the right texture—similar to soft playdough.

3. Shape the pearls:

Pinch off small bits and roll into tiny balls, about the size of a pinhead or BB pellet. This is what gives tapioca pudding its texture.

Let the pearls dry on a tray lined with parchment for a few hours or overnight (optional but helps them hold shape when cooking).

4. Cook the pearls:

Bring a pot of water to a rolling boil.

Add the pearls and boil for 15–20 minutes, stirring occasionally.

Then let them sit in the hot water (off heat) for another 10–15 minutes until translucent and soft.

5. Drain and use:

Rinse under cool water.

Add directly to your pudding base or store in a little water if not using right away.
