I shopped at a combination of Walmart, target and central market.
1 tbsp oil of choice
1/2 onion 0.63 (1.27 for whole! Use for another recipe)
4 cloves garlic .67
2 c lentils 2.50
1 15.5 oz can chickpeas 1.49
1 28 oz can whole tomato’s 2.98
1/2 c cashews 2.75
28oz water free!
1 small ginger root .60
9oz spinach 1.99
PRO TIP: go to stores with bulk seasonings and only grab exactly how much you need for the recipe! Total should be no more than 2.00 for all.
Seasoning Blend $2.00
1 tbsp Garam Marsala
1 tbsp Curry powder
2 bay leaves
1 tsp cayenne
1 tsp paprika
1 tsp garlic
1 tsp onion powder
Heavy pinch salt and pepper
1 tbsp bouillon (0.15c per serving!)
1 tbsp brown sugar
Toppings - additional not needed!
Cilantro .50

Begin by waiting your onion and garlic u til fragrant. Top with 1/2 tbsp garam marsala and 1/2 tbsp curry powder. Mix well, sauté for an additional minute then top with your lentils!
Directions
Mix well and lower heat. While that’s toasting, add your tomatoes and cashews to a high powdered blender and blend until smooth. Add to your lentils and top with your water, chickpeas, seasoning blend and ginger root. Excluding brown sugar and spinach for final topping.
Cover your pot and allow to cook at a low simmer for 25 minutes or just until tender stirring periodically.
Top/serve as desired but it’s good to go all on its own! Enjoy!
