Cinnamon Apple Pork Loin

Ingredients

2 to 4lb Pork Loin

1 Tbls Cinnamon

2 Tbls Brown Sugar

2 Tbls Olive Oil

1 Cup Beef Broth

1-2 Granny Smith Apples

Fingerling Potatoes (Optional)

Fresh Green Beans (Optional)

Salt and Pepper

Directions

1. Cut slits in pork loin every couple of inches and stuff each slit with a slice of apple.

2. Rub pork loin with olive oil, brown sugar, and cinnamon and place into crock pot.

3. Add beef broth around sides of the pork loin.

4. Add vegetables on top of roast (if using).

5. Turn crock pot to low and cook until roast is shreddable (8 to 10 hours). Season with salt and pepper as needed.

6. Serve as a roast with green beans and potatoes. Also good with barbecue sauce on hamburger buns.
