Homemade Granola Bars

Ingredients

2 c old fashioned oats

4 tbls coconut oil (sub with canola or vegetable oil)

1/4 c brown sugar

1/3 c honey

1/2 tsp vanilla extract

2 cups plain cereal like Chex, rice crispies, etc (crushed if using Chex)

1/2 tsp salt

1/4 c mini chocolate chips

Toast oats in oven at 350 for 3-5 minutes. Add oil, brown sugar, and honey to a saucepan and bring to a simmer for 2 minutes. Remove from heat. Add vanilla.

Directions

Add oats, cereal, salt and ingredients in saucepan to a bowl and stir to combine. Once cooled add chocolate chips.

Press into an 8x8 pan lined with parchment paper. Chill for an hour in the fridge. Cut into bars.
