The Humble Chicken Curry! Probably the Most Common Tradition

1 chicken, cut into 8 pieces
200g chopped tomatoes
5 tbsp oil
2 medium onion, chopped finely
1 fresh tomato, chopped small
1 tbsp ginger & garlic paste
Pinch of garam masala
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp cumin seeds
2 Cinnamon sticks
Salt to taste
Cardamon pods
Whole black peppercorns
Fresh chopped coriander
2 medium potatoes, cut into quarters
Directions
In a pot, add oil, cumin seeds, cinnamon sticks, cardamom pods, black peppercorns, and onions. Fry onions until golden brown.
Add in the chicken pieces, ginger and garlic, and potatoes if you're adding any.
Cook the chicken until water has evaporated from the chicken.
Add in the chilli powder, turmeric powder, cumin powder, coriander powder, and salt. Blitz the tinned tomatoes and fresh tomato and add this in. Mix everything and cook until the tomatoes have reduced.
Pour about 2 cups of water and gently simmer until the curry thickens slightly. sprinkle over a pinch of garam masala
Garnish with fresh coriander and Julienne ginger.
Serve with rice or chapatis.
