Chicken Pesto Quesadilla

Ingredients

4 Large Flour Tortilla

2 cup Rotisserie Chicken

3 tablespoon Basil Pesto

1 cup Frozen Spinach

1 1/2 cup Shredded Mozzarella Cheese

to taste Ground Black Pepper

to taste Guacamole

to taste Sour Cream

Seasoning for chicken

Italian seasoning

Garlic

Pepper

Salt

Red chili flakes

Directions

In a mixing bowl, combine Rotisserie Chicken (2 cups), Basil Pesto (3 Tbsp), Frozen Spinach (1 cup), Shredded Mozzarella Cheese (1 1/2 cups), and season with Ground Black Pepper (to taste).

On a flat surface, place a Large Flour Tortilla (4). Spread the chicken mixture around and cover with another tortilla.

In a pan over medium heat, grease with cooking spray. Place the quesadillas and cook for 2-3 minutes on each side until golden and cheese has melted.

Transfer to a cutting board and cool for about 3 minutes before cutting.

Cut it in quarters like a pizza and enjoy it with Guacamole (to taste) and Sour Cream (to taste).
