Poached Eggs

Ingredients

4 fresh eggs

1.5 litres of water

3 tbps of vinegar

Directions

Bring water to a gentle simmer and add the white wine vinegar.

Fresh eggs, one at a time, need to be strained through a small fine mesh sieve, until the liquid of the egg white separates and falls through. This should take less than 15 seconds for fresh eggs.

The strained egg can then be put in a small container.

Drop egg in the gently simmering water solution, making sure to leave space between them.

After cooking, take out with a slotted long handle spoon and let them rest on a paper towel for 1 minute to drain any excess water.

3-4 mins for runny yolks

5 mins for set yolks
