Crispy Air Fryer Potatoes

Ingredients

500g potatoes (17.6oz or 3 medium-sized potatoes)

1/2 tsp salt (adjust to your taste)

1 tsp peri peri seasoning

1/2 tsp cajun seasoning

1 tsp paprika

1 tsp garlic powder

30g rice flour (1/4 cup)

25g cornflour or cornstarch (3 tbsps + 1 tsp)

20ml oil (1 tbsp + 1 tsp)

sour cream (optional)

chilli flakes (optional)

spring onions (optional)

3 slices of american cheese

30g cheddar cheese (about 1/4 cup)

30ml whole or full fat milk (2 tbsps)

Directions

wash potatoes, then cut them up into bitesized pieces or chunks. to cut the potatoes, slice each potato into half lengthways, then slice each half into half again lengthways.

turn the halved potato sideways, and cut so that you get small triangle sized pieces of potato.

once all of the potatoes have been sliced into chunks or bitesized pieces, wash them again with cold water, and then pat them dry completely.

add the potatoes to a large bowl. add the paprika, peri peri seasoning, salt, garlic powder and cajun seasoning. then, add the oil.

mix all of this into the potatoes until the potatoes are coated in the seasoning and oil.

add the cornstarch and rice flour to the seasoned potatoes and mix this into the potatoes with a spoon or your hands until the potatoes are coated.

grease the air fryer basket, then place the potatoes in the basket in a single layer, making sure not to overcrowd it. air fry the potatoes in batches. there will be some liquid left in the bowl - do not add this to the basket.

air fry each batch of potatoes at 200 °C (400°F) for 6 minutes then shake the air fryer basket and toss the potatoes around. then continue air frying for another 4 minutes. remove from the air fryer - they should look golden and crispy. repeat with the each batch until all of the potatoes are cooked.

once each batch of potatoes is cooked, add them all back to the air fryer together and air fry again at 200 °C (400°F) for another 2 minutes.

make the cheese sauce. in a small pot, add the slices of american cheese, the cheddar cheese and milk.

mix the cheeses into the milk over low heat until the cheese melts into the sauce, and you get one smooth mixture.

the mixture will be thin at this point. continue to cook the mixture over low heat, stirring continuously until the sauce thickens up.

pour the cheese sauce over the crispy air fryer potatoes.

top your crispy air fryer potatoes with sour cream, chilli flakes and spring onions, and let’s eat!
