Eggplant Dip

Ingredients

1 giant eggplant

salt

4ish cloves garlic

1 large shallot

Turmeric

Paprika

1/3 cup Labneh

1/2 Lime

Red chili flakes

Sumac

Fresh dill (optional)

Directions

Slice eggplant and sprinkle with salt to get the bitter taste out

Rough chop garlic and shallot

Drizzle eggplant with olive oil and season with turmeric, paprika, salt and pepper

Place eggplant, garlic and shallot on a pan/griddle over high heat

Remove once charred and garlic/Shallots have softened some

Chop/mush everything together and add labneh

Top with Sumac, Lime juice, red chili flakes, dill, and more olive oil
