Okra Stew

Ingredients

1.5 pounds stew meat

1 onion chopped

4 large cloves garlic minced

2 diced tomatoes

3 tablespoons tomato paste

1 bay leaf

1/2 teaspoon ground turmeric

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon ground cinnamon

3 cup water

1 pound okra

3 tablespoons brewed saffron

Directions

In large pot heat oil on high; add the meat and cook until browned on all sides, about 5 minutes.

Add the onion and garlic and sauté another 5 minutes, stirring occasionally.

Add the diced tomato, tomato paste, bay leaf, turmeric, salt, black pepper, cinnamon, and water.

Cover the pot, bring it up to a boil, and then turn it down to a simmer. Let it cook until the meat is tender, about 1 hour 15mins, stirring occasionally.

Add the okra and cook for 30 minutes.
