Restaurant Style Salsa

10-12 medium Roma tomatoes, or similar amount of whatever's on hand
1 chipotle in adobo (optional)
1/2 red or white onion
3 cloves garlic
1 jalapeno, cut in half lengthwise
1 handful cilantro leaves, roughly chopped
juice of 1/2 - 1 whole lime
1 teaspoon salt
1 teaspoon sugar*
Directions
Heat a pan with oil over med high heat. Once pan comes to temperature, add the vegetables (except chipotle and cilantro) cut side down to the pan. Do not move the veggies, allow to char slightly, about 5 minutes. Flip and char other side.
Add veggies, chipotle pepper, lime juice, salt and sugar (if using) to blender and process to desired consistency.
Notes
This salsa is medium as written with 1 jalapeno (seeds included) and 1 chipotle in adobe.
Veggies could easily be grilled instead of the pan.
Original recipe called for a can of fire roasted tomatoes. Last time making it, I used 8-10 small tomatoes and the can of fire roasted tomatoes (added at the end because it needed to mellow out).
