Marry Me Skillet Salmon

1/2 c. finely chopped sun-dried tomatoes, plus 2 Tbsp. tomato oil from jar, divided
4 (6-oz.) salmon fillets
Kosher salt
Freshly ground black pepper
4 garlic cloves, finely chopped
1 tbsp. fresh thyme leaves
1 tsp. crushed red pepper flakes
3/4 c. low-sodium fish or vegetable broth
1/2 c. heavy cream
1/4 c. finely grated Parmesan
Torn fresh basil leaves, for serving
Directions
Arrange a rack in top third of oven; preheat broiler. In a large ovenproof skillet over medium-high heat, heat 1 Tbsp. tomato oil. Generously season salmon on both sides with salt and black pepper and cook, undisturbed, until golden brown, about 3 minutes. Flip and cook until flesh is just starting to brown, 1 to 2 minutes more. Transfer salmon to a plate.
In same skillet over medium heat, heat remaining 1 Tbsp. tomato oil. Stir in garlic, thyme, red pepper flakes, and 1/2 cup chopped tomatoes. Cook, stirring frequently, until fragrant, about 1 minute. Stir in broth, cream, and Parmesan; season with salt. Bring to a simmer and cook, stirring occasionally, until sauce is slightly thickened, 2 to 3 minutes. Return salmon and any accumulated juices to skillet.
Transfer skillet to oven. Broil salmon until an instant-read thermometer inserted into thickest part registers 135°, 4 to 6 minutes.
Arrange salmon on a platter. Spoon sauce over. Top with basil.
