Vicki's Hush Puppies

1 quart oil for frying, or as needed
1 large onion, diced
½ cup white sugar
2 large eggs, beaten
1 cup self-rising flour
1 cup self-rising cornmeal
Note- the recipe calls for self-rising flour & cornmeal, but we used non self-rising and added 1 1/2 teaspoons baking powder and 1/4 teaspoon of salt to each cup of flour and cornmeal as a common ratio per AI. (It is easier to just combine the flour and cornmeal first then add 3 teaspoons of baking powder and 1/2 teaspoon of salt to the combined 2 cups)
Directions
Gather all ingredients.
Heat 2 inches oil in a deep saucepan (We used the Fry Daddy instead) over medium heat to 365 degrees F (185 degrees C).
While oil is heating, mix together onion, sugar, and eggs in a medium bowl. Blend in flour and cornmeal to make a batter.
Make rounded hushpuppies by using a metal 1/4 measuring cup. Drop them into hot oil and fry until golden brown, 1 to 2 minutes per side. Transfer to a paper towel-lined plate to drain.
Serve hot and enjoy!
Notes
Note for future reference- the hushpuppies were difficult to round before dropping because they seemed to have too much liquid so they flattened out a bit. The only liquid was from 2 eggs and diced onions so we should try to squeeze out some of the liquid from the onions by wrapping in paper towels
