1 cup Greek yogurt, divided (I used Chobani, 10% protein)
1½ tablespoons chia seeds
2 teaspoons maple syrup
4 tablespoons freshly brewed coffee
2 tablespoons rolled oats
2 teaspoons cacao powder (for dusting)
Directions
In a container, mix together ¾ cup of the Greek yogurt with the chia seeds, maple syrup, coffee, and oats.
Stir well until fully combined.
Cover and place in the fridge overnight (or at least 2 hours).
Before serving, top with the remaining ¼ cup Greek yogurt and dust with cacao powder.
This pudding provides approximately 28g of protein with ~25g from the Greek yogurt and ~3g from chia seeds and oats, and around 9g of fibre, from the chia seeds, oats, and cacao powder.
