5 eggs, separated (only use 3 of the whites)
5 tablespoons sugar
500gm / 17.5 oz marscapone
1 pint of strong espresso coffee
Savoiardi (Ladyfinger) biscuits
Grated chocolate
Directions
In a bowl, whisk together the egg yolks and sugar.
Blend in the marscapone — don't mix too much or it will thicken too much.
In another bowl, whisk 3 of the egg whites until soft peaks form. Fold the egg whites into the marscapone mixture.
Dip the savoiardi biscuits one at a time in the coffee, and layer a large shallow dish.
Add some of the marscapone mixture on top. Make another layer of biscuits and marscapone mixture.
Put the dish in the fridge for a few hours.
Before serving, cover with a layer of grated chocolate.
TIRAMISU ALLA FRAGOLE: Make a sauce with strawberries (Reeping some lumps), sugar and a few squeezes of lemon juice. Use instead of coffee.
TIRAMISU CAN BE FROZEN AHEAD OF TIME.
