Carrot Cake

2 cups flour
2 tsp. soda
1 tsp. salt
4 eggs
2 tsp. cinnamon
1 cup oil
2 cups sugar
3 cups grated carrots
Directions
Mix all ingredients well. Bake at 350 for 45 minutes in 2 - 8" or 9" layers or 9 x 15. Cool in pans. Frost with cream cheese icing.

I got this recipe from Bev Phalen when we lived in town. It's delicious!
