Ingredients

2 Eggs

4 cups flour

1 pinch of salt

1 splash Water (~ 2 tbsp)

Directions

  1. Kneed mixture into dough

  2. Roll into flat disk (~ 1/4" thick)

  3. Carefully roll disk of dough into a spiral (like cinnamon roll)

  4. Chop across spiral in ~1/4" wide slices

  5. Unroll noodles and lay on parchment lined, floured sheet pan for 4-8 hours or overnight to dry

  6. Boil when ready to use

Notes

  • Flour work area generously and ensure dough is not too sticky or dry when rolling

  • Noodles should be approx. 1/4" thick and 1/4" wide, length may very
