Easy Jambalaya

Olive Oil
1 tablespoon Cajun seasoning
1 andouille sausage link
1 lb of protein (cubed chicken breast and/or shrimp)
1 onion
1 bell pepper
1 Jalapeno
3 cloves garlic
1 (16 ounce) can crushed Italian tomatoes
½ teaspoon red pepper flakes
½ teaspoon ground black pepper
Cheyenne to taste
1 teaspoon salt
1 ¼ cups uncooked white rice
2 ½ cups chicken broth
Green onions and Hot Sauce for serving
Directions
In a heavy bottom pot cook the andouille sausage until brown and a find has formed on the bottom of the pot. Take the sausage out and save for later.
Chop all the veggies and sauté in the olive oil in the pot. Try to scrape all the good bits from the bottom of the pot.
Add the spices and garlic. Cook until fragrant.
Add the canned tomatoes, chicken broth and rice. Simmer on low, stirring frequently. The rice will stick to the bottom if not stirred and will burn.
When the rice mostly cooked add your protein and cook until done.
Serve with chopped green onion and hot sauce.
