Best Pot Roast Crock Pot Recipe

Ingredients

3 to 4 lbs chuck roast

2 cups low-sodium beef broth

4 large carrots, chopped

4 medium Yukon Gold potatoes, quartered

1 large onion, sliced

4 cloves garlic, minced

2 tsp fresh thyme (or 1 tsp dried)

2 tsp fresh rosemary (or 1 tsp dried)

Salt and pepper to taste

Directions

Prepare ingredients by chopping carrots and potatoes into large chunks. Slice the onion and mince the garlic.

Generously season both sides of the chuck roast with salt and pepper.

In a skillet over medium-high heat, sear the roast for about 3-4 minutes per side until browned.

Layer the seared roast in the bottom of your crock pot, followed by carrots, potatoes, onions, and garlic. Sprinkle thyme and rosemary on top.

Pour in enough beef broth to cover the vegetables while leaving some of the roast exposed.

Cover and cook on low for 8 hours or high for 4 hours until tender.
