Ingredients

Traybake Tofu & Harissa-Spiced Couscous🔥

One tray, one bowl, big flavour – this is easy, hearty, and totally banging 🔥🌿

You’ll Need:

For the traybake

280g firm tofu (torn)

1 red pepper, 1 courgette, 1 red onion (chopped)

1 x 400g tin chickpeas (drained)

1 tbsp olive oil

1 tbsp harissa, 2 tsp smoked paprika

2 tsp oregano, salt & pepper

For the couscous

200g couscous

1 tbsp harissa, 1 tbsp olive oil

275ml hot veg stock

100g pomegranate seeds (or dried fruit)

Handfuls of parsley & coriander

For the drizzle

3 tbsp tahini

2 tsp harissa paste

Water to loosen, pinch of salt

How to Make It:

1️⃣ Roast the tofu & veg – Bake tofu & onion for 15 mins, then add pepper, courgette, chickpeas, harissa & spices. Roast another 20–25 mins till golden.

2️⃣ Make couscous – Pour hot harissa stock over couscous, cover & let sit 10 mins. Fluff with a fork, stir in herbs & pomegranate.

Directions

Mix drizzle – Whisk tahini, harissa & water until smooth & pourable.

Plate up – Couscous base, roasted veg & tofu on top, tahini drizzle, more herbs & pomegranate to finish ✨
