Shrimp Avocado Boats - Ready in Minutes

Base
2 ripe avocados, halved and pitted
½ cup avocado flesh (scooped from the boats)
Seafood
8 oz cooked shrimp, peeled, deveined, and chopped
Fresh Filling
1 small tomato, finely diced
¼ cup red onion, finely chopped
2 tbsp fresh cilantro, chopped
Dressing & Seasoning
1 tbsp olive oil
1 tbsp fresh lime juice
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
Finish
Lime wedges, for serving
Directions
Prepare the avocado boats
Cut avocados in half and remove pits.
Scoop out some flesh to create space, keeping the shells intact.
Chop the scooped avocado and set aside.
Mix the filling
In a bowl, combine shrimp, tomato, red onion, cilantro, and chopped avocado.
Season gently
Add olive oil, lime juice, garlic powder, salt, and black pepper.
Toss gently so the avocado stays slightly chunky.
Fill the boats
Spoon the mixture back into the avocado halves.
Pile slightly on top for a full, generous look.
Serve fresh
Squeeze lime juice over each just before serving.
Enjoy immediately while everything is bright and fresh.
