Smoked Pork Loin Dinner

Ingredients

Pork loin 3.5-4 lbs

Rice 2-2.5 cups

Broccoli 2 lbs

Butter 4 Tbsp/(1/2) stick

Olive oil 1/3 cup

Pork seasoning of choice 1/2 cup

L spade ranch fish or beef seasoning 4tbsp

Mustard 1/4 - 1/3 cup

Directions

Completely coat pork loin in mustard

Coat pork loin in pork rub and store in fridge over night

Add second coat of rub to pork loin the place in smoker set to 250° for 3 hours or until internal temperature read 145° let rest for 15 minutes

Add broccoli, fish/beef seasoning, olive oil to a large sealable bowl. Add lid and shake for 5-10. Let sit for 20 minutes

Place rice in rice cooker with 1/2 a stick of butter

Spread broccoli on baking sheet or tin and bake for 20 minutes at 375 then an additional 15 minutes at 250

Slice pork I to half inch sliced and serve with a scoop of rice and broccoli

Notes

Seasonings can be substituted for any seasoning of choice
