Coconut Cream Chicken Spinach (Percy)

25Lbs Chicken Thighs
30 Lbs frozen chopped Spinach (2 cases)
20 onions, finely chopped
2 Lbs Butter/Margarine
6 cans of frozen coconut cream
Directions
Skin and bone thighs and dice chicken
Saute onions in butter/margarine.
Add chicken and cook until tender.
Salt to taste
Thaw spinach and bring to a gentle simmer.
Add chicken, salt (if needed)
Add coconut milk just prior to serving.
