Golden Cheesy Top, Creamy Chicken Filling and Buttery Mashed

Ingredients

MASHED POTATOES:

500 g potatoes

30 g butter

60–80 ml milk

salt & black pepper

CREAMY CHICKEN:

500 g chicken, diced

1 small red bell pepper, diced

1 small yellow bell pepper, diced

1 small green bell pepper, diced

2 garlic cloves, minced

1 small onion, chopped

1 tsp salt

½ tsp black pepper

1 tsp paprika

1 tsp garlic powder

1 tsp oregano

80–100 ml cooking cream

60 g mozzarella

40 g cheddar cheese

TOPPING:

mozzarella

cheddar cheese

Directions

Peel and cut the potatoes into cubes. Boil until fork tender, then drain.

Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.

Heat a pan over medium-high heat with a little oil. Add the chicken and cook until lightly golden.

Season the chicken with salt, pepper, paprika, garlic powder, and oregano. Mix well.

Add onion, garlic, and all three peppers. Cook for a few minutes until softened.

Lower the heat and add the cooking cream. Stir until creamy and slightly thickened.

Add mozzarella and cheddar cheese. Mix just until melted and creamy.

Add mashed potatoes to the bottom of two oven-safe dishes. Top with the creamy chicken mixture.

Finish with mozzarella and cheddar cheese on top.

Bake at 180°C for 15–20 minutes or until golden.
