French Onion Chicken And Rice Casserole

Ingredients

Chicken

Cook with:

1 cup beef broth

1 tsp Better Than Bouillon Beef

1 tsp Better Than Bouillon Chicken

Garlic

Pepper

Rice

Cook in beef broth.

Add

1 tsp MSG

2 large onions, caramelized until deep golden

1 cup Greek yogurt

1 cup blended cottage cheese

1 cup mozzarella

½ cup Swiss cheese

¼ cup Parmesan

Directions

Put 1 cup of water in the first Instant Pot.

Season the chicken then place on the trivet.

Pressure cook 8-10 minutes thawed, or 14-16 frozen, then let it naturally release for 10 minutes.

Remove and shred the chicken.

Meanwhile, cook the rice separately (rice cooker or stovetop if available), or use the 2nd Instant Pot after removing the chicken:

2 cups rinsed jasmine rice

2½ cups broth

High Pressure 4 minutes, 10-minute natural release.

Then stir everything together with the onions, Greek yogurt, cottage cheese, cheeses and seasonings.
