Broccoli Cheese Soup
1/2 cup butter
1 onion - chopped
2 packages frozen broccoli (chopped)
4 cans chicken broth
2 lbs Velveeta cheese (cubed)
2 cups half and half
1 tbsp garlic powder
2/3 cup cornstarch
In a stockpot, melt butter over medium heat.
Cook onions in butter until soft.
Stir in broccoli and cover with 3 cans of chicken broth.
Simmer until broccoli is tender (10-15min)
Reduce heat and stir in cheese until melted.
Mix in half and half, and garlic powder.
In a small bowl, stir cornstarch and 4th can of chicken broth together.
Stir into soup and cook, stirring until thick.
