Homemade Marshmallow Fluff

3 egg whites
3/4 cup honey
2/3 cup cane sugar
1/4 cup water
Optional (but recommended):
1 tsp vanilla extract
pinch of salt
Directions
Start the sugar syrup
In a small saucepan combine the honey, cane sugar, and water.
Place over medium heat and bring it up to a simmer. Let the sugar dissolve and cook the syrup until it reaches 246°F (118°C) on a thermometer.
This stage is what gives the fluff its structure and glossy texture.
Start whipping the egg whites
While the syrup heats, add the egg whites and a small pinch of salt to a stand mixer fitted with the whisk attachment.
Whip on medium speed until the egg whites become foamy and just start forming soft peaks.
You want them aerated but still soft so they can properly absorb the hot syrup.
Slowly pour in the syrup
Once the syrup reaches 246°F, reduce the mixer to medium speed.
Very slowly drizzle the hot syrup down the side of the bowl while the mixer runs.
Take your time here. A slow stream allows the syrup to cook and stabilize the egg whites without deflating them.
Whip until fluffy
Once all the syrup is added, increase the mixer speed and continue whipping for 5–7 minutes.
The mixture will transform into a thick, glossy, marshmallow-like fluff.
When the bowl feels just warm instead of hot, it’s ready.
Finish it
Add the vanilla extract and whip for another 20–30 seconds.
You should end up with a silky, cloud-like marshmallow fluff that holds soft peaks.
