How Beautiful Is This Pink Lemonade Made from Violets?! a Ch

Our yard is bursting with these gorgeous purple spring flowers and we’ve been harvesting them almost daily! I’ve dried some to save for teas, and used about 2.5 cups to make one half gallon and one quart jar. I’m more of a “measure with your heart” kind of gal, so measurements are approximate:
3/4 C washed purple violets
1 quart boiling water
1/2-3/4 C lemon juice
1/4-1/2 C raw local honey
Directions
place washed violets into a quart jar & pour boiling water over until full. Let cool and place in fridge overnight. Strain out violet flowers, rinse jar, and pour infusion back into the jar. Add in lemon juice & watch the magic happen!🪄 I added honey to my desired sweetness, about 1/2 cup. You could also make a 1:1 ratio simple syrup instead of honey.
This recipe is so simple and was so fun to make with my family! (Bonus homeschool lesson about chemical reactions🙌🏼)
