Beef & Broccolini Stir-fry

Ingredients

Olive oil spray

500g beef rump steak, trimmed, thinly sliced

1 red onion, cut into thin wedges

1 garlic clove, thinly sliced

3cm piece ginger, peeled, cut into matchsticks

1/2 small fresh red chilli, thinly sliced

1 bunch broccolini, cut into thirds

1 1/2 tablespoons dry sherry

1 1/2 tablespoons soy sauce

1 teaspoon cornflour

1 cup steamed basmati rice, to serve (optional)

Directions

Spray a large deep nonstick frying pan or wok with oil and heat over medium-high heat. Add half the beef and stir-fry for 2-3 minutes or until browned. Transfer to a plate. Repeat with the remaining beef.

Add the onion, garlic, ginger and chilli. Stir-fry for 1 minute. Add the broccolini stems and a splash of water and stir-fry for 2 minutes. Add the florets and stir-fry for a further 1-2 minutes or until tender.

Combine the sherry, soy sauce and cornflour in a small bowl. Add to the pan and stir-fry for 1 minute. Divide among serving dishes.

Serve with rice if desired.
