Black Sesame & Soy Tteokbokki

Ingredients

2 cup Anchovy Broth

3 tablespoon Aged Soy Sauce

8 ounce Rice Cake

3 tablespoon Toasted Black Sesame Seeds

2 stalk Scallion

1 tablespoon Sesame Oil

to taste Perilla Leaf

to taste Lemon

Directions

If Rice Cake (8 oz) is frozen, keep it submerged in tap water for about 20 minutes to thaw.

Roll up the Perilla Leaf (to taste) then thinly slice.

In a medium pot, bring Anchovy Broth (2 cups) to boil.

Add Aged Soy Sauce (3 Tbsp) and rice cakes. Cook until rice cakes have softened, about 3 minutes. The broth should be reduced by half.

Add Toasted Black Sesame Seeds (3 Tbsp) and Sesame Oil (1 Tbsp), stir, then turn off the heat.

Garnish with Scallion (2 stalks), perilla leaves, and zest of the Lemon (to taste), if using. Serve immediately.
