Bbq Corn Ribs

Next up on SUMMER SIDES we have these bbq, lime corn ribs w a spicy mayo. Think corn on the cob but elevated
3 corn on the cobs, cut into quarters
4 tbsp extra virgin olive oil
1 tsp smoked paprika
3 tsp BBQ seasoning
1 lime
2-3 tbsp parmesan
2 tbsp chives, finely chopped
1 1/2 tbsp Greek yoghurt
1 tbsp mayonnaise
1 tbsp sriracha
1/2 tbsp lime juice
Directions
Pre-heat your oven to 190C/375F.
Cut your corn into quarters.
Add 3 tbsp olive oil into a baking tray followed by the corn ribs.
Then add BBQ rub and smoked paprika and mix them all in with your fingers until all coated.
Flip the corn so that the corn is face up and finish with another drizzle of olive oil.
Place into the oven for 40-45 minutes, until the corn is all cooked and slightly golden.
In a bowl, mix the greek yoghurt, mayonnaise, sriracha and lime juice.
Serve the corn ribs in a bowl with the dip in a little bowl next to them.
Squeeze around 1/4 lime juice on top and sprinkle on some parmesan, chives. Eat!
