Spring Ravioli with Fried Prosciutto

Ingredients

This is a decadent creamy ravioli dish that incorporates our favorite spring vegetables. It’s super simple to prepare and it’s next level delicious.

4 tablespoons butter

4-5 slices prosciutto

1 shallot sliced

8 oz peas

8 oz asparagus chopped

1c heavy cream

Salt and pepper

1 Ib ravioli

Grated Parmesan

Directions

Melt butter in a large skillet and add the prosciutto. Fry on each side until crispy and remove from pan. Add the shallots and saute until softened. Add the peas and asparagus and cook a few minutes then add cream and season with salt and pepper. Keep warm and cook the ravioli until almost tender. Using a slotted spoon add directly to the skillet with the sauce. Continue cooking over low heat until tender adding pasta water as needed. Remove from heat and top with freshly grated Parmesan.
